For the air-fried sweet potatoes
- 1½ pounds sweet potatoes, peeled and cut into ¾-inch cubes

- 1 pound 93/7 lean ground beef

- 12 ounces corn kernels, fresh or frozen
- Avocado-oil cooking spray
- 2 teaspoons minced garlic
- 1–2 teaspoons minced jalapeño, optional
- ¼ cup chopped fresh cilantro
- ¼ cup chopped green onions
- ⅓ cup plain nonfat Greek yogurt
- 1 tablespoon mayonnaise
- Zest and juice of 1 large lime
- ¼ teaspoon chili powder
- ¼ teaspoon smoked or regular paprika
- ⅛ teaspoon ground cumin
- Salt and black pepper, to taste
For serving
- 1 large avocado, diced
- 2 tablespoons crumbled cotija cheese, optional

Instructions
1. Air-fry the sweet potatoes
Preheat the air fryer to 390°F.
Place the sweet potato cubes in a large bowl. Spray them generously with avocado oil, tossing a few times so the cubes are lightly and evenly coated. Add the paprika, garlic powder, salt, and pepper and toss again.
Air-fry for 14–18 minutes, shaking the basket every 5 minutes, until the potatoes are tender inside and browned around the edges. Cook in batches when necessary so the potatoes have room to crisp.
2. Cook the beef
Heat a large skillet over medium-high heat. Add the ground beef and let it cook undisturbed for about a minute before breaking it apart.
Cook until browned and no longer pink. Drain excess grease if needed.
Add the Siete Taco Seasoning and the amount of water directed on the packet. Simmer until the meat is evenly coated and the liquid has reduced.
3. Char the corn
Lightly coat a large skillet with avocado-oil spray and heat it over medium-high heat.
Add the corn in an even layer. Let it cook without stirring for 2–3 minutes, then stir and continue cooking until lightly browned, about 5–7 minutes total.
Add the garlic during the final 30 seconds. Transfer the corn to a bowl and allow it to cool for several minutes.
4. Make the lighter street corn
In a small bowl, whisk together the Greek yogurt, mayonnaise, lime zest, lime juice, chili powder, paprika, cumin, salt, and pepper.
Add the cilantro, green onions, and jalapeño to the cooled corn. Pour in the dressing and stir until everything is evenly coated.
If the mixture is thicker than you prefer, stir in a teaspoon of water or additional lime juice.
5. Assemble the bowls
Divide the air-fried sweet potatoes and taco beef among four bowls. Spoon the street corn over the top.
