As the fall season sweeps in with its cozy charm, nothing beats a comforting home-cooked meal. In our weekly collaboration with @davisnaturalproduce, we're shining the spotlight on the ever-versatile zucchini! While this green veggie has made its presence known in a myriad of dishes, its magic in a lasagna was truly a delightful discovery.
Why Zucchini in Lasagna?Zucchini's delicate flavor beautifully complements the robustness of the lasagna layers, offering a refreshing bite that will leave you craving more. Plus its a GREAT way to get in more veggies! This one-skillet recipe, courtesy of @therealfooddietitians, is not just mouthwateringly delicious but is also incredibly easy to whip up for those snug evenings indoors.
Ingredients:
- 1 tsp avocado/olive oil 🥑
- 1 lb lean ground beef 🥩
- 1 medium zucchini, finely diced 🥒
- 1 yellow bell pepper, finely diced 🫑
- 1 small onion, finely diced 🧅
- 4 garlic cloves, minced 🧄
- 1 jar (24oz) marinara sauce 🍅
- 1 tsp dried Italian seasoning 🌿
- 1 ½ cups water 💧
- 8 oz broken lasagna noodles (GF if needed) 🍜
- 1 cup cottage cheese (or ricotta) 🧀
- 6 oz shredded mozzarella cheese 🧀
- Fresh basil for garnish 🌱
Steps to Lasagna Bliss:
- Heat the skillet and add oil, beef, zucchini, bell pepper, onions, and garlic. Sauté until the veggies soften, approximately 8-10 minutes.
- Stir in the marinara sauce, seasoning, and water, and bring to a boil.
- Introduce the broken lasagna noodles to the skillet, and let it simmer covered on a low flame until the noodles are soft, around 25-30 minutes.
- Mix in the cheeses and continue cooking for an additional 5 minutes. 🍲
- Sprinkle the top with mozzarella and let it stand for 5 minutes off the heat. For a gorgeous golden crust, broil for 3-4 minutes. Lastly, garnish with fresh basil.
