- Cook the Peppers: Add the olive oil to the pan and swirl to coat. Toss in the shishito peppers, ensuring they’re in a single layer for even cooking. Allow the peppers to cook, undisturbed, for 2-3 minutes until they start to blister and char on one side.
- Flip and Blister: Using tongs or a spatula, flip the peppers over to blister the other side. Continue cooking for another 2-3 minutes, shaking the pan occasionally, until the peppers are blistered and charred all over. Some peppers may pop slightly as they cook – that’s normal!
