Ingredients:
- 1 lb 80/20 ground turkey
- 16 oz bag tri-color coleslaw mix (green cabbage, red cabbage, and carrots)
- 1/2 of a Napa cabbage - sliced into ribbons
- 1/4 cup low sodium tamari or soy sauce
Instructions:
- Brown the Ground Turkey:
- Heat a large non-stick pan over medium-high heat.
- Add the ground turkey to the pan and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-8 minutes.
- Add the Coleslaw Mix:
- Once the turkey is fully cooked, add in the shredded coleslaw mix.
- Reduce the heat to medium and continue to cook, stirring frequently, for another 3 minutes or until the cabbage and carrots become almost tender.
- Add the Napa cabbage and stir until it is soft and wilted.
- Flavor with Coconut Aminos:
- Pour in the tamari/soy sauce and stir well to combine.
- Cook for an additional 1-2 minutes to allow the flavors to meld together.
- Serve:
- Remove the pan from the heat.
- Divide the stir-fry into 4 portions and serve hot.
